Teaching at the CIA

What Makes the CIA Unique?

  • We have four educational campuses. The Hyde Park Campus, New York; Greystone Campus, California; San Antonio Campus, Texas; and the Singapore Campus.
  • We have different lengths of classes. For example, we have classes that range from 3 weeks, 5 weeks, 7 weeks, and 15 weeks.
  • We have a variety of learning experiences, such as lectures, kitchen labs, and restaurants. 
  • We have a mandatory dress code for our students. We begin teaching our students professionalism upon their entry to the CIA.
  • We are an attendance taking school. If students miss too many classes, they will fail their course.

Using CIA Cares to Support Your Students

 

Find and click the link to CIA Cares in Moodle on the right-side drawer. It looks like this:

Search for your student:

Choose your student. Once the student record appears, it will look similar to this:

Choose one of the options highlighted in yellow.

  • Flags are typically used when the student needs assistance or is failing a class.
  • Kudos are used to let the student know they are doing well in the class, or they did something well.

Why Are They Important?

 

Professionalism, Uniform, and Hygiene—Undergraduate Guidelines

At the Culinary Institute of America, we have very specific Professionalism, Uniform, and Hygiene guidelines.

While it remains a full community responsibility, faculty play a key role in education and compliance around the guidelines. As a faculty member, please address any student that is not wearing the correct professional attire. 

These are just a few key areas that students need to be reminded of occasionally. 

  • In lecture classes, things like hoodies, t-shirts, shorts, and athletic footwear are not within the guidelines, and faculty should not allow students to remain in class in this attire.
  • In lecture classes, athletic footwear (as opposed to sneakers designed as non-athletic footwear) are not permitted.
  • In lab classes, finger jewelry, facial piercings, or earrings are not permitted unless a student has a registered accommodation with the Office of Disability Services. One plain band ring, however, is permitted. And covering facial jewelry with a mask is not allowed, since when students taste foods, the jewelry will be exposed.
  • In lab classes, a beard snood must be worn, if relevant.
  • In lab classes (kitchen or FOH), the uniform must be worn in its entirety (authorized pants, shoes, chef coat/shirt buttoned up, hair restrained).

 Please be mindful to focus on these most frequent non-compliance issues. It would be appropriate to send a student home to correct the issue and return to class when back in compliance. We also encourage you to visit the full guidelines document, which is available in the academic catalog.
